Ingredients

  • 3 cups fresh basil
  • 3/4 cups grated Pecorino Romano cheese
  • 2 large cloves of garlic
  • 1/2 tsp Mad Maddie’s Buttery Garlic Seasoning
  • 1/4 cup roasted unsalted almonds
  • 3/4 cups extra virgin olive oil

Grilled Baby Portobellos

  • 1 lb. baby Portobello mushrooms
  • 2 oz. Mad Maddie’s Buttery Garlic Seasoning
  • Olive oil
  • Skewers
  • 2 sprigs of fresh rosemary

BBQ Bob's Pesto Directions

  • Add all ingredients in a food processor and blend until sauce is creamy

Preparation

  1. Preheat grill to 325F to cook direct
  2. Wash and dry the mushrooms
  3. Place mushrooms in a mixing bowl and coat them lightly with olive oil then dust with Mad Maddie’s Buttery Garlic seasoning
  4. Begin adding mushroom to skewers
  5. Brush pesto on finished skewers
  6. Grill mushrooms for approximately 10 minutes, flipping half way through
  7. Once mushrooms have a slight char, remove skewers from the grill
  8. Remove mushrooms from skewers and place back into the mixing bowl
  9. Pour remaining pesto over mushrooms
  10. Garnish with rosemary
